Born and raised in San Juan Amecac, Puebla, Mexico, Chef Pedro’s culinary journey has been shaped by a deep passion for food and an unwavering commitment to excellence. After immigrating to New York, he immersed himself in the city’s dynamic restaurant scene, gaining over 15 years of experience in the industry.

For three years, Pedro has been at the forefront of plant-based cuisine, serving as the Executive Chef of Soda Club. Under his leadership, the restaurant has proudly maintained Michelin’s Bib Gourmand recognition for three consecutive years, a testament to his dedication to quality, creativity, and the guest experience.

Pedro’s philosophy is simple yet profound: food is essential, but preparing it with purity and intention elevates it to something extraordinary. His work is driven by a desire to create dishes that celebrate the beauty of plant-based ingredients while honoring his culinary roots.
